Tabouleh is a Lebanese recipe we cook at home for many years . I really do not know when I started doing it. Katie, though a native of Liverpool , she spent a year with us , and now you can imagine it’s like a daughter for we all. One of her favorite dishes is this, and she always asks me to uploud it. Here it is.
For the pasta
-1 Cup of water
-1 Cup of couscous
– A drizzle of olive oil (or a teaspoon of butter)
-1 red pepper
-1 green pepper
-1 spring onion
-1 Spanish cucumber
-1 large tomato (no seeds )
-1 large bunch of parsley
-3 or 4 sprigs of mint
-juice of half a lemon
-two or three tablespoons of olive oil
1.- Put in a pan: water, salt and oil.
2.- Bring to a boil and add the cup of couscous
3.- Remove it from heat and let stand 3 minutes
4.- Stir until the couscous be well separated
5.- Let stand at least 1 hour until it cools .
6.- Chop all the vegetables as small as possible
7.- Mix all with the couscous , salt to taste, finely chopped herbs, lemon, olive oil and a little pepper.
